Pesto Pasta with Shrimp

Who eats pasta for breakfast?! Me!!!

I want to get my kids to eat less processed food so last month I decided to get meself a noodle maker from Philips. It’s easy to use; just put flour and water or egg and water; press the button and it will process by itself. The set also comes with measuring cups and noodle disc so you don’t have to worry about getting the wrong flour:water proportions. This way, if I want to feed my kids with veggie, I’ll just juice that veggie mix it with flour and viola! Veggie noodle.

For this recipe (which serves 3) I used around 250 grams of fresh pasta, cooked it for 6 minutes and set aside.

For the shrimps, I used 300 grams removed the head and skin (or shell?) then cut in half and remove the black vein.

In a pan heat 2 Tbsp of olive oil and put the shrimp heads. This will allow more shrimp-y flavour in the pasta. Once it is cooked and the juices have sat on the pan, remove the heads and put the shrimp meat. Saute until shrimp turn to orange. Put around 1/2 cup of pesto (recipe from here) and mix with the shrimp. After around 1 minute, put the cooked noodles – put out the fire and toss to coat the noodles with pesto and it is done! Serve with grated parmesan cheese on top.
